Open Fields is working to develop value chains for ancient grains and old varieties and to investigate their possible uses and promotion in food products.
Ancient grains in Italy are an emerging market in constant rise. Ancient cereal species keep their original genetic characteristics intact. Examples of ancient grains are einkorn, emmer, spelt, Kamut® whereas Senatore Cappelli durum wheat is an example of old variety. Ancient grains have positive nutritional features while health benefits still have to be demonstrated. Ancient grains and old varieties are particularly suited for organic farming, thus, promoting the agriculture production of ancient grains in Italy, means not only encouraging the recovery of agro-biodiversity, but also the recovery and valorization of marginal areas.
